The daily choices we make about what we eat and how we care for our bodies profoundly impact our overall health, especially during illness or treatment. Throughout Corrina’s journey, we learned just how vital nutritious, whole foods and regular exercise were in helping her heal and, ultimately, thrive.
Prior to her diagnosis, Corrina adopted a completely plant-based, vegan diet, eliminating all animal products. During and following treatment, she re-introduced some moderate consumption of fish (including SeaCare), but we firmly believe her predominantly “plant-forward” diet was essential to her recovery and survival.
On this page, we share some of the nourishing recipes and exercise regimens that give Corrina strength, energy, and resilience to this day.
We also highlight the exercise routines that Corrina practices with daily discipline. She has always been a firm believer to “Never Stop Moving!”
Food and movement truly have been medicine throughout Corrina’s journey. We hope these diet and exercise recommendations will uplift you too.
A Note from Claudia.
While I'm not a vegan, I've always loved scratch cooking and baking. My mother was an incredible baker and I have many fond memories of learning how to make a variety of breads and cookies under her loving tutelage. For many years, I have prepared soups, salads, casseroles, and desserts for friends, family, neighbors, and colleagues who are struggling with an illness or life challenges. There's nothing like a homemade meal to fill the belly and warm the soul. That is why I gladly took on the challenge of assuming the role of Corrina and David's personal weekday vegan chef. It also helped that I retired 8 months after Corrina's GBM diagnosis. I now had the time, opportunity and desire to become my new IG persona "The Amateur Vegan Chef".
I do menu planning on Saturday and shopping on Sunday, then meal prep on Sunday afternoon in order to spread out my time in the kitchen and keep meals as fresh as possible throughout the week. I will admit some weekends it's hard to find the motivation to dig through my recipes and/or surf the web for inspiration and new meals, but I have several go-to resources featured here which never fail.
